Friday Drop: Eat the Rainbow
Including skittles if you'd like.
Can I be a cliche dietitian for a sec?
It’s actually really helpful to include fruits and vegetables in your diet.
I’m traveling this week and can’t jump in the kitchen to try out a recipe for you. Instead, I’m challenging myself to think of A-Z color options that are EASY enough for any busy, rehabbing athlete to grab.
A - Apple Chips
B - Berries
C - Cuties, Carrots, or Celery
D - Dried Mango
E - Edamame
F - Fruit Bars
G - Guacamole
H - Harvest Snaps
I - Iceberg Lettuce
(In a salad kit.) Add chicken, a bit of crunch, and roll it into a wrap for a great lunch.
J - Jicama Fries
K - Kiwis!
Two before bed may even help your sleep.
L - Little Greens
I’m struggling to find an L and lemon water felt like a cop out, so this is me telling you that even a little bit is better than nothing.
M - Mushroom Tacos
In this economy, roasting some mushrooms, chopping them small, and mixing into your taco meat will help stretch that meal, too.
N - Nectarines
O - Onions
Yes! Onions count as a color.
P - Pickled Veggies
Q - Quiche
A great way to throw your leftover veg into a dish before they wilt. This one uses a frozen crust, so I’m letting it slide as an easier option. (Q is hard!)
R - Raisins
S - Salsa
Half a cup of salsa counts as a serving of vegetables 😊
T - Tart Cherry Juice
U - Ugli Fruit
Today, I learned that there is something called ugli fruit, or a Jamaican tangelo. This also reminded me that Misfits Market is a great subscription service that will send you ugly fruit (and veg) every month at a lower cost than their more beautiful counterparts at the grocery store.
V - Varieties of Squash
W - Watermelon
X - Xclude nothing
If you can think of an x option here, please share! Instead, similar to L, I’ll use this as an opportunity to remind you that the goal is to simply add these foods, not use them to replace others. (See zucchini noodles.)
Y - Yucca Fries
Z - Zucchini Noodles
IN ADDITION TO!!! regular noodles. The goal is not to replace your carbohydrate source with zucchini. Yuck.
